  2. 2 dientes ajo

  4. 600 ml Vinagre
  5. 400 ml aceite
  6. Especias varias
  7. c/n Sal

  1. Lavar y cortar las berenjenas en círculos de 1 cm aproximadamente, colocar en un colador y espolvorear con sal. Dejar 30 minutos para que libere el amargor.
  2. Enjuagar y colocar en una cacerola, agregar el agua y 400 ML de vinagre. Hervir por 10 min
  3. Van a quedar un poco transparentes, colar y dejar enfriar
  4. Agregar en un recipiente el aceite y el resto del vinagre, sal y pimienta a gusto, orégano, provenzal, ají molido y los ajos picados, mezclar (si desean agregar más condimentos, hacerlo! Es a gusto de cada uno)
  5. Usar un frasco limpio y esterilizado (yo lo lavo bien y lo coloco en una olla con agua, debe cubrirlo por 3 cm, los dejo 10 minutos desde que rompe el hervor, retiro con una pinza y apoyo boca arriba en una bandeja de horno y los meto hasta que se sequen. Sin tocarlos por dentro los saco y ya los puedo usar)
  6. Una vez que las berenjenas están frías las coloco dentro del frasco intercaladas con la mezcla de condimentos, una berenjena, una cucharada de mezcla, y así hasta llegar al tope
  7. Cuando completamos el frasco, podemos poner unas hojas de laurel a los costados y guardar por 3 días para que tome bien el sabor.
