  1. Primero siempre preparamos los ingredientes... cortamos el puerro en rodajas, separamos y lavamos los arbolitos de la coliflor y pelamos, lavamos y cortamos en trozos no muy grandes y de similar tamaño la patata, boniato y calabaza.
  2. En una olla con un chorrito de aceite de oliva, pochamos el puerro a fuego medio para que no se queme. Cuando empiece a oler, añadimos el resto de ingredientes junto con una pizca de sal, pimienta negra, cúrcuma y ralladura de jengibre fresco (yo puse muy poquito porque pica y luego añadí más).
  3. Le damos unas vueltas que se integren todos los sabores y añadimos agua hasta un poquito más que cubrir los ingredientes. Ponemos a hervir 30 min o hasta que los ingredientes estén blanditos.
  4. Lo siguiente es quitar algo de caldo, según la consistencia que queramos (yo quito casi todo y voy añadiendo según lo necesite y el resto lo reservo en botes de cristal para otras recetas) y añadimos los 2 quesitos (aquí lo probé y puse más jengibre) y batimos con la batidora hasta conseguir una crema.
  5. Por último, en una sartén con un poquito de aceite de oliva, freímos ligeramente los taquitos de jamón. Los añadimos a la crema y listo
  6. Servir y disfrutar 😋
